Yeah you can, they call that incubating. You can only save up to a maximum of 10 spars. Your contract will end due to inactivity but it won't ruin his career going forward. Remember careers last between 7 and 15 game years so don't incubate too long. I'd recommend trying to steer your camp to a certain style so you can get the equipment associated with that style. Ok, on the fighter screen click edit and you can drop them down a weight class. Fighters can drop 35lbs max, this is calculated using the desire boxes. I think each desire box equals 7lbs but im not 100%. Upgrading your equipments means your guys will train better and increase their stats faster. A rule of thumb most use is to upgrade fighter slots until it becomes more expensive than the equipment. Try to decide a style and buy the equipment with the stats linked. Have you decide a style yet?
